Protein style burgers are one of the easiest and most frequent dinners we have. They are so easy to whip up and what you can add to it is endless. I usually just buy frozen grassfed beef patties for the protein in this dish.
This is an example of the endless possibilities of what you can do with some frozen patties!
On top of some mixed greens with tomatoes and an egg with sweet potatoes and bacon wrapped asparagus. The star of this was the Argentinian chimichurri sauce on top!
This was a super easy, delicious, & comforting meal. I followed a recipe from againstallgrain’s cookbook which you can find here.
I made a few changes. I bought an unseasoned rotisserie chicken and just added it to the pot once veggies were done. I also used kale instead of spinach.
Copycat chick-fil-a chicken nuggets and sweet potato patties.
For the chicken nuggets, I followed a recipe from the domestic man.
Only change I made was excluding the buttermilk/cream. I also fried them in bacon fat, which made them even more delicious.
For the sweet potato patties, I shredded it using a food processor, mixed it with eggs and flavorgod spicy seasoning, and cooked in a skillet.
I followed a recipe from cookeatpaleo for a quick diy holiday gift for a few friends.
I used olive oil instead of coconut oil because I was too lazy to melt it, maple syrup instead of honey, & the types of mixed nuts I used were cashews, pecans, & almonds.
It’s winter break for me now and it feels fantastic!
Being on vacation and the holidays is not an excuse to eat crappy food, only some times…we gotta indulge and satisfy our cravings sometimes!
Tonight was an easy dinner with salmon coated with kerrygold butter and Flavorgod everything spicy seasoning, stir fry kale with garlic, & roasted potatoes seasoned with flavorgod garlic lovers seasoning.
I had some leftover chicken from when I made chicken zoodle soup last night…and the only best way I could think of to use up the extra chicken, was to make a pot pie…obviously.
I followed a recipe from fedandfit. I also added some bacon and potatoes to the fillings.
This might just be our new favorite dinner.
Crispy mashed potato waffles topped with ground beef, bacon, onions, & kale…and of course, an egg.
I put in grass fed butter, chicken broth, Flavorgod garlic lovers, & parsley into my mashed potatoes.

Tortillas from stupideasypaleo are absolutely amazing. I makes these frequently.
Slow cooked chipotle tacos are from againstallgrain and they was easy and delicious. Only thing I changed was using chipotle pepper powder versus dried ones. I prepped everything the night before in the slow cooker and stored it in the refrigerator to start cook the next morning. An almost ready meal to come home to after work and crossfit is one of the best things ever!
Had these with avocado and salsa with sides of plantain chips and roasted sweet potatoes.
2 pounds ground beef
1 chopped up small onion
4 minced garlic cloves
1/2 cup almond flour
Salt & pepper
Seasonings/herbs to your liking
(Such as paprika, onion powder, garlic powder, parsley, etc)
I like to brown my meatballs in bacon fat in a cast iron then finish it off in the oven at 350 degrees for about 15 minutes.
Serve with zoodles and sauce!
Finally starting a little blog to compile all my/our interests, hobbies, and loves into one place.
This little outlet was named kandjhappydays because these entries will most likely incorporate both Kevin and I. Originally a hashtag (#kandjhappyday) was created to collect pictures on Instagram related to our wedding, but I’ll like to believe our happy days are not limited to one…thus the creation of this little blog!
More than likely entries will be about our dog, Ava, whom we really think is one of the best dogs in the world. Sometimes it might just be a picture of her…but sometimes those are the best.
I will also be sharing the meals have together, as we eat predominately paleo, because it has changed our lives and hope that it inspires others to eat healthier and more mindfully. We also crossfit together, which I’ll probably not talk too much about because you’ll probably not enjoy reading it as much as I enjoy writing about it. But, it has not only improve our lives and health individually, but has made our relationship grow stronger,which naturally happens as a couple do things together.
Another big reason I wanted to start this blog was to record all the DIYness that will go into our wedding. I am so excited!
